Fattoush salad recipe
It's not for nothing that we made it our emblematic salad, because fattoush is so colorful that it will brighten up any table. At our house, even the children ask for more thanks to the crispiness of the pita chips and their tangy sweet taste.
THE FATTOUSH SALAD
2 pita breads cut into small squares
1 small romaine lettuce, thinly sliced
1 medium tomato, cut into small cubes
1/4 red pepper cut into small cubes
1/4 yellow pepper cut into small cubes
1 Lebanese cucumber cut into small cubes
2-3 radishes, very thinly sliced
2 tbsp. tablespoon coarsely chopped flat-leaf parsley
2 teaspoons coarsely chopped fresh mint
1/4 tsp. teaspoon Aleppo pepper
1 C. sumac soup
A small handful of pomegranate seeds
VINAIGRETTE
The juice of a lemon
1 clove of garlic, finely chopped
1/2 cup olive oil
1 C. tablespoon of cider vinegar
1 C. pomegranate molasses
Salt pepper
PREPARATION
1. Fry the pita bread in vegetable oil or on a plate with
olive oil in the oven at 350°F, until crispy.
2. In a bowl, whisk together all the vinaigrette ingredients.
3. Place all the fattoushe ingredients in a salad bowl, then
add the vinaigrette, the pita pieces, mix and decorate with
some pomegranate seeds.
