It's not for nothing that we made it our signature salad, because the fattoush is so colorful that it will brighten up any table. With us, even children want more thanks to the crispy pita chips and their tangy sweet taste.
2 pita breads cut into small squares
1 small romaine lettuce, minced
1 medium tomato, finely diced
1/4 red pepper, finely diced
1/4 yellow pepper, finely diced
1 Lebanese cucumber, finely diced
2-3 radishes, sliced very thin
2 tbsp. coarsely chopped flat-leaf parsley
2 teaspoons coarsely chopped fresh mint
1/4 tsp. Aleppo pepper
1 c. sumac
A small handful of pomegranate seeds
The juice of a lemon
1 garlic clove, finely chopped
1/2 cup olive oil
1 C. cider vinegar
1 C. pomegranate molasses
1. Fry the pita bread in vegetable oil or on a baking sheet with in olive oil in 350 ° F oven, until crispy.
2. In a bowl, whisk all the dressing ingredients.
3. Place all the fattoushe ingredients in a bowl, then add the vinaigrette, the pieces of pita, toss and garnish with some pomegranate seeds.
