Shawarma (marinated beef) | Les Filles Fattoush

This simple dish is synonymous with comfort food. It's mostly prepared during the week, and its popularity is due to its marinade and slow cooking. It's always served with tomatoes, pickled turnips, tahini sauce, and pita bread so everyone can create their own sandwich.
Ingredients :
- 1 kg thin steak (inside round), cut into strips
- 80 ml (1/3 cup) apple cider vinegar
- 60 ml (1/4 cup) olive oil
- 1 tbsp shawarma spice
- 1 tsp salt
For 4 to 6 servings:
In a bowl, combine the meat, cider vinegar, olive oil, shawarma spices, and salt. Cover and refrigerate. Let the meat marinate for 3 to 4 hours or overnight.
In a saucepan over medium heat, simmer the meat in its own juices, covered, for about 40 minutes or until it has absorbed about 80% of the marinade.
Serve with tomato slices, pickled turnips, fresh pita bread and tahini sauce.
