Basbousa (Semolina Cake) | Les Filles Fattoush
This classic Syrian cake is traditionally served with a strong Turkish coffee. It’s even better when shared in good company!
Ingredients (makes 9 squares):

440 g (2 cups) medium semolina

110 g (1 cup) unsweetened shredded coconut

105 g (½ cup) sugar

180 ml (¾ cup) plain yogurt

1 tsp baking powder

125 ml (½ cup) vegetable oil

Whole nuts (pistachios, cashews, almonds, etc.), to taste
Ingredients for the syrup:

840 g (4 cups) sugar
-
500 ml (2 cups) water
-
1 tsp orange blossom water or rose water
Preparation:
In a bowl, combine the semolina, coconut, and sugar. Add the yogurt, baking powder, and vegetable oil using a wooden spoon. Mix well until a smooth, uniform batter forms.
Spread the batter evenly in the pan. Using a knife, cut the cake into 9 squares measuring about 5 cm (2 in) each. Cover and refrigerate for 4 to 5 hours.
Preheat the oven to 370°F (190°C). Grease a 20 cm (8 in) square baking pan.
Top each square with nuts, to taste, and bake the basbousa for 25 to 30 minutes, or until a toothpick inserted into the centre comes out clean
